Recipe of the Month: Blueberry Lime Cake

A deliciously flavourful dessert that your whole family will love. It’s healthy too!

Blueberry Lime Cake:

3 cups spelt flour 3 tsp baking soda

1/2 tsp salt

2/3 cup canola or coconut oil

4 tsp apple cider vinegar

1 tbsp vanilla

3/4 cup vanilla soy or almond milk

1 cup maple syrup

1/4 cup lime juice

1 tbsp lime rind, grated

1 cup WILD blueberries

Preheat oven to 350, combine flour, baking soda and salt. In separate bowl, whisk together oil, vinegar, vanilla, milk, syrup, lime juice and rind. Pour wet into dry. Add blueberries. Bake in 2 springform pans or 9×13 pan for 35 minutes – toothpick should come out clean.


2 cups WILD blueberries

2 tbsp maple syrup

2 tbsp lime juice

Place blueberries in med. saucepan over med. heat and stir until breaking down. Add lime juice and maple syrup and stir thoroughly. Remove from heat and place in blender for several seconds until smooth. Clean blender right away or else it sticks!

Chill for 1 hour. Pour sauce over cake just prior to serving.
